CHEESY CORN MUFFINS 
1 c. flour
1/4 c. sugar
3 tsp. baking powder
1/2 tsp. salt
3/4 c. cornmeal
1 c. milk
1/4 c. salad oil
1 egg, well beaten
3/4 c. grated Cheddar cheese

Sift first 4 ingredients. Add cornmeal. Add remaining ingredients and stir until moistened. Fill well greased cups 2/3 full. Cook at 425 degrees for 15 minutes.
