LEMON CHICKEN | |
2 to 3 lb. frying chickens, skinned, cut up for barbecue 1 cube butter melted with 1/4 c. lemon juice 2 tsp. salt 2 tsp. sugar 1/4 tsp. pepper 1/4 tsp. paprika 1/4 tsp. garlic powder Soak chicken in oil at least 1/2 hour before cooking (drain well). Mix spices together. Grill chicken 15 to 20 minutes on both sides. Turn and baste with lemon butter sauce and sprinkle with spices. Cook 10 minutes, turn, bate, sprinkle. Cook 10 minutes, turn baste, sprinkle. Cook 10 minutes. Entire cooking time should be from 1 hour 10 minutes to 1 hour 20 minutes, depending on how well done you want it. This is done on a Weber or covered barbecue. If there are any leftovers, it can be frozen and microwaved for reheating. |
