ITALIAN SAUSAGE WITH CABBAGE AND
GREEN PEPPERS
 
18 Tennessee Pride Italian Sausage Links, cut in bite size pieces
1 lb. sliced cabbage
1/2 lb. salt pork, diced
3 med. onions, peeled or diced
1 or 2 garlic cloves, minced
1/4 c. chopped parsley
6 green peppers or green or red peppers, seeded, cut into pieces
1 tsp. rosemary, oregano or Italian seasoning
1/2 tsp. pepper
1/4 lb. Prosciutto or country ham, diced

Wilt the cabbage by cooking covered with a small amount of water, just until tender. Set aside. Fry the salt pork, adding onions, garlic and parsley when it has yielded enough fat. Add sausage and cook 20 minutes more. Then add cabbage and ham. Cover and cook 10 minutes to blend flavors.

To serve: Place sausage, vegetables and ham in serving dish and serve hot.
