IRISH SODA BREAD 
5 lbs. bread flour
2 lbs. pastry flour
3 oz. baking soda
3 oz. baking powder
5 oz. granulated sugar
10 oz. all purpose shortening
2 oz. salt
10 oz. non fat dry milk
1 lb. whole eggs
5 lbs. (approx.) water

Mix and develop above ingredients. Mix into dough: 4 oz. caraway seeds

Scale 20 ounces, round up, flatten into greased 9" cake pan. Cut cross on top of loaf. Bake at 375 degrees.
