SHORTBREAD COOKIES 
1/2 lb. unsalted butter
1/2 lb. salted butter
2 c. sugar
4 c. flour
1/2 c. rice flour (buy in health food store)

Cream butter and sugar; add flours. Roll on lightly floured surface. Roll fairly thick. Cut into rectangles and prick with a fork. Bake at 300 degrees for 20 to 40 minutes (don't brown). Bake only long enough to dry the dough out.
