APRICOT CHICKEN 
8 boneless chicken breasts
1 lb. dried apricots, cooked in water with a little sugar
1 1/2 to 2 c. orange juice
1 tbsp. cornstarch

Brown chicken in skillet. Put in foil-lined baking dish. Make sauce using orange juice, cornstarch. Add a few mashed apricots and cook until thick. Pour sauce over the chicken and apricots. Bake at 350 degrees for 30 to 40 minutes.
