GAIL'S CHOCOLATE CHIP AND WALNUT MUFFINS | |
1/3 c. granulated sugar 1/3 c. dark brown sugar 2 c. all-purpose flour 2 tsp. baking powder 1/2 tsp. salt 2/3 c. milk 1/2 c. (1 stick) unsalted butter, melted and cooled 2 eggs, lightly beaten 1 1/2 tsp. vanilla 6 oz. (1 c.) milk chocolate chips 6 oz. (1 c.) semi-sweet chocolate chips 1/2 c. chopped walnuts Or can use 1 (12 oz.) package semi-sweet chocolate chips. In a large bowl, stir together sugars, flour, baking powder and salt. In another bowl mix together milk, butter, eggs, and vanilla until blended. Make a well in center of dry ingredients. Add milk mixture and stir to combine. Stir in chips and nuts. Spoon batter into greased muffin cups, include greasing the edges around cups. Bake in 400 degree oven for 15 to 20 minutes or until a cake tester inserted into the center of one muffin comes out clean. Remove muffins from oven and cool 5 minutes. Remove from pans and cool on rack. Serve warm or cold. Makes 12 large muffins. |
