FRESH APPLE POUND CAKE 
2 c. sugar
1 1/2 c. corn oil
3 eggs
2 tsp. vanilla
3 c. apples, finely chopped
3 c. flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1/2 c. nuts, chopped

TOPPING:

1/2 c. brown sugar
3/4 c. water
1/2 c. sugar
3 tbsp. flour
1/4 c. butter

Cream together the sugar, oil, eggs and vanilla until fluffy. In a separate bowl, mix apples, flour, baking soda, baking powder, salt, cinnamon and nuts. Add creamed mixture to apple mixture and blend well. Pour into a greased and floured 10 inch Bundt pan. Bake at 325 degrees for 1 hour and 15 to 20 minutes. Cool on rack.

For topping, mix all ingredients in saucepan and cook until mixture is clear. Pour warm topping on cake and let it drizzle down the sides. This cake may be made a day ahead. Serves 14.
