BLUEBERRY MUFFINS 
1/3 c. melted butter
2 tsp. liquid sweetener
1/4 c. water
2 eggs
1 1/4 c. cornmeal
3/4 c. flour
3/4 tsp. salt
2 1/2 tsp. baking powder
3/4 c. milk
1/2 c. blueberries, drained

Mix together butter, sweetener, water and eggs. Stir in cornmeal. Sift together flour, salt and baking powder. Add alternately with milk. Fold in blueberries. Pour 1/4 cup batter into greased muffin tins. Bake at 400 degrees for 20 minutes. Yield: 1 dozen.

1 muffin = 1 starch and 1 fat.
