MEXICAN LASAGNA 
1 lb. ground beef
1/2 c. chopped onion
2 tbsp. taco seasoning
1 1/2 c. tomato sauce
1 (6 oz.) jar mild taco sauce (Picante)
1 c. cottage cheese
3 eggs
1 sm. can diced black olives
10 taco shells
1 c. Monterey Jack
1 c. Cheddar cheese

Brown together meat and onion; drain. Add taco seasoning, tomato sauce and picante sauce. Simmer 10 minutes.

Combine in small bowl 3 eggs, cottage cheese and olives.

Grease a 9x13 pan. Layer in order:

1/2 meat mixture

5 broken taco shells

1/2 cottage cheese mixture

1/2 cup of each cheese

Repeat again. Bake 350 degrees 30 minutes.. Let rest 5 minutes.
