BUFFALO WINGS 
24 chicken wings
4 c. cooking oil
4-7 tbsp. hot pepper sauce
Celery sticks
Blue Cheese Dressing, recipe follows
Salt & pepper
1/2 c. butter
1 tbsp. white vinegar

Cut and discard small tip of wings. Slice remaining portion into pieces by cutting through joint. Wash pieces well and pat dry. Season to taste with salt and pepper.

Heat oil in deep fryer or pan. Fry half of chicken pieces in hot oil for about 15 minutes, until skin is crisp and golden brown. Remove pieces and drain. Repeat for second batch of wings.

Melt butter in saucepan. Add vinegar and hot pepper sauce. 4 tablespoons of sauce for mild wings and 7 tablespoons for hot. Place wings and hot sauce in covered bowl. Shake bowl to evenly coat pieces with sauce. Serve immediately with celery and Blue Cheese Dressing.
