YANKEE BLACK EYED PEAS 
2 cans black eyed peas
4 tbsp. salsa (med. or hot)
1/2 tsp. Morton's Nature's Seasoning
4-6 oz. Monterey Jack cheese
2 stalks celery (optional)
Pam

Saute celery in Pam until tender, about 4 minutes. Drain black eyed peas and add to celery. Add salsa and cook over medium for about 8 minutes. Add Monterey Jack and turn off heat. Let sit for a few minutes and then serve.
