SOUTHWEST CHICKEN WITH RICE | |
1 package Rice-a-Roni Spanish rice 1 14.5 oz can of Mexican stewed tomatoes 1 package chicken tenders seasoned with taco seasoning ½ cup Pico de Gallo 1 teaspoon garlic powder 1 teaspoon seasoned salt Taco Seasoning: 4 tablespoons chili powder 3 tablespoons + 1 teaspoon paprika 3 tablespoons cumin 2 tablespoons garlic powder 1 tablespoons + 2 teaspoons onion powder 2 teaspoons cayenne pepper 2 teaspoons Tony Chachere's Pico de Gallo: 5 to 6 Roma tomatoes 1/2 white onion 2 jalapenos 1/2 cup cilantro 1 tablespoon lemon juice salt and pepper, to taste Dice tomatoes and onion, chop jalapenos and cilantro finely. Add lemon juice, salt and pepper, mix well and refrigerate. Prepare rice per directions using 2 cups chicken broth instead of water. Grill chicken at the same time cut up and add to rice mixture with Pico De Gallo and spices. Submitted by: Chris |
