CAJUN CATFISH 
1 1/2 lb. catfish
4 tbsp. butter
1 tsp. cayenne (red pepper)
1/2 tsp. thyme
1/2 tsp. paprika
1/2 tsp. oregano
1/2 tsp. black pepper
1/2 tsp. salt

In a small saucepan melt butter with all other ingredients. Coat both sides of fillets. Broil 5 minutes each side or until opaque.
