Dishes made of cereals and flour - starchy foods have more advantages. They are inexpensive and ideal for low income budgets; storage presents no problems as there is no deterioration of these dry foodstuffs. Both flour paste and cereal dishes are easily prepared and may be cooked in advance. Any cooked cereal is called "kasha". It may be made of buckwheat groats, rice, barley, wheat or cornmeal. An extensive cultivation of buckwheat in Ukraine has given this cereal a top prominence in the general diet of the people. All varieties of kasha are served as a substitute for potatoes, or as a basic dish in combination with a protein food. COTTAGE CHEESE PUFF: 2 c. cottage cheese 4 eggs, separated 1 c. cream 1/4 c. cream of wheat Salt Press cottage cheese through a sieve. Beat egg yolks well; add to cheese along with cream. Beat thoroughly. Stir in cream of wheat; season to taste with salt. Beat egg whites until stiff; fold gently into cheese mixture. Spoon into buttered baking dish; set in a pan of hot water. Bake at 350 degrees for 35 to 45 minutes or until done. Serve hot with sour cream and a green salad. |
