1 env. Lipton onion soup mix
2 lbs. potatoes cut in large cubes
1/3 c. olive or vegetable oil

Preheat oven to 450 degrees. Shake all ingredients in large plastic bag until potatoes are evenly coated. Grease shallow baking dish and bake, stirring occasionally, 40 minutes or until potatoes are tender and golden brown. Serves 8.
