MY HUSBAND'S FAVORITE SOUP | |
1 lb. Italian sausage (hot or medium) 1 c. coarsely chopped onion 2 cloves garlic 5 c. beef broth 1/2 c. water 1/2 c. red wine 2 c. chopped tomatoes (4 med.) 1 c. thinly sliced carrots 1/2 tsp.basil leaves 1/2 tsp. oregano leaves 8 oz. can tomato sauce 1 1/2 c. sliced zucchini 1 can kidney beans 8 oz. frozen tortellini (filled with cheese or meat) 3 tbsp. chopped parsley 1 med. green pepper, cut in 1/2 inch pieces Parmesan cheese Remove casing from sausage. Brown. remove. Save 1 teaspoon drippings. Saute onions and garlic until tender. Add broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce and sausage. Bring to boil. Reduce heat. Simmer uncovered 30 minutes. Skim fat. Stir in zucchini, beans, tortellini, parsley and pepper. Simmer covered 35 to 40 minutes until tortellini is tender (20 to 25 minutes if tortellini is fresh). Sprinkle with cheese on each serving. |
