ROLLED OATMEAL COOKIES 
2 1/2 c. all-purpose flour
1/2 c. sugar
1 tsp. salt
1/4 tsp. baking soda
3/4 c. brown sugar
2 eggs
1 tsp. vanilla
3/4 c. shortening
2 c. oatmeal

Sift flour, sugar, salt and baking soda into bowl. Add brown sugar, eggs and vanilla. Mix well. Cut in shortening. Add oatmeal; work with fingers until dough holds together. Sprinkle board with powdered sugar. Roll dough to 1/4-inch thick. Cut. Bake at 350°F for 10-12 minutes. Frost and decorate.
