MEAT CRUST PIE 
1 lb. ground beef
1/4 c. grated onion
2 tsp. salt
2 cans (8 oz.) tomato sauce
1 1/3 c. minute rice
1/2 c. dry bread crumbs
1/4 c. chopped green pepper
1/8 tsp. oregano
1/8 tsp. pepper
1 c. water
1 c. grated sharp Cheddar cheese
4-6 tomato slices

Combine meat, bread crumbs, onions, green peppers, 1 1/2 teaspoons of the salt, pepper, oregano and 1/2 cup tomato sauce. Mix well and pat onto bottom and sides of greased 9 inch pie plate.

Combine remaining 1 1/2 cups tomato sauce, 1/2 teaspoon of salt, water, minute rice and 1/2 cup cheese. Spoon mixture into meat shell. Cover with another pie plate. Bake in 350 degree oven for 25 minutes. Remove cover, top with remaining cheese and slices of tomato. Bake uncovered for another 10-15 minutes. Makes 5-6 servings.
