WALNUT OATMEAL PIE IN
CHOCOLATE-NUT CRUST
 
CRUST:

18 chocolate wafer cookies, crushed (1 c.)
3/4 c. walnut meats, finely chopped
1/4 c. butter

FILLING:

3/4 c. light corn syrup
3/4 c. brown sugar, packed
1/2 c. milk
1/4 c. butter, melted
2 lg. eggs
3/4 c. quick oats
1 tsp. vanilla
1/2 c. (3 oz.) semi-sweet chocolate chips
1/2 c. walnut pieces
Whipped topping

Crust: Heat oven to 350 degrees. Mix all crust ingredients together in medium bowl, just until blended. Turn into a 9 inch pie plate. Press firmly and evenly over bottom and up sides. Bake 7-8 minutes until firm. Cool on rack 10- 15 minutes.

Filling: Meanwhile whisk syrup, brown sugar, milk, butter, eggs and vanilla in a large bowl until well blended. Stir in remaining filling ingredients. Pour into crust. Bake 45-50 minutes until knife inserted in center comes out clean. If crust begins to brown too fast, cover edges with foil.

Cool on wire rack. Just before serving, garnish with dollops of whipped topping and sprinkle with chopped walnuts. Makes 12 servings.
