KOLACH
1 cup (2 sticks) butter
4 oz. cream cheese, softened
1 1/2 cups all purpose flour
1/4 tsp. salt
1/4 tsp. sugar
1/2 cup preserves

Put butter in bowl of electric mixer. Beat on medium speed until butter is fluffy. Add cream cheese, beat until well incorporated. Beat in flour, sugar, and salt until most of flour is mixed. Finish mixing by hand. (Do not overbeat or kolachy will be tough.) Flatten dough into a disk; wrap in plastic wrap. Chill 4 hours or overnight.

Heat oven to 350°F. Divide dough in half returning 1/2 to the refrigerator. Roll dough on lightly floured surface to 1/8 inch thickness. Cut dough into 3 inch squares with a sharp knife. Place squares on ungreased baking sheet. Place 1 teaspoon of preserves in center of each square. Fold each corner to the center and press lightly into the preserves.

Bake 14 to 16 minutes until lightly browned. Cool on baking sheet 5 minutes. Remove to wire rack to cool. Generously sprinkle with confectioners sugar while still warm.

Makes about 25 tender cookies that will melt in your mouth.
