CANDIED YAMS 
3 lg. sweet potatoes, rinsed & sliced
1 stick butter
1/2 tsp. nutmeg
1 tsp. lemon juice
1 1/2 c. sugar

Melt the butter in a large skillet and add potatoes. Cover and let cook over medium head, turning about every 10 minutes, until potatoes begin to get soft. Add lemon juice, sugar and nutmeg. Cover and cook on low until liquid begins to caramelize.

These potatoes are good with any Soul Food dish as well as Roast Pork and Turkey.
