LIGHT & AIRY YOGURT PANCAKES 
4 egg yolks (save whites
1/4 c. sugar
2 c. yogurt (you choose flavor)
1/2 stick butter, melted
1 1/2 c. all-purpose flour, sifted
2 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt

Beat egg yolks with sugar until thick and light. Stir in yogurt and butter. Sift together flour, baking powder, baking soda and salt. Add to sugar mixture and beat until blended. Beat 4 egg whites until stiff and fold into batter. Drop batter by tablespoons onto lightly greased griddle. When bubbles are formed turn and brown other side. Serve with syrup, honey and browned sausages. Makes about 30 (3 1/2 inch) pancakes.
