CHEDDAR STUFFED ZUCCHINI | |
4 med. zucchini, about 1 lb. 3/4 c. shredded cheddar cheese 1/2 c. Italian style bread crumbs 2 tsp. instant minced onion 1/4 tsp. salt Rinse and cut end from zucchini. Place zucchini in medium saucepan. Cover with water and bring to boil. Reduce heat. Boil about 15 minutes until tender. Drain off water. Replace with cold water to chill zucchini. Slice zucchini in half lengthwise. Scoop out insides. Chop finely insides of zucchini. In foil lined pan, place zucchini shells close together. Combine zucchini pulp, cheese, crumbs, onion and salt. Mix well. Spoon into shells. Bake at 350 degrees for 15 minutes or until cheese is melted. |
