COTTAGE CHEESE PIE 
1 1/2 c. cottage cheese
1/2 c. sugar
2 tbsp. flour
1/4 tsp. salt
2 eggs, separated
2 c. milk
1/4 tsp. cinnamon
1/2 tsp. lemon rind

Combine cottage cheese, sugar, flour, salt, lemon rind and spices. Add beaten egg yolks. Mix thoroughly. Add milk gradually. Stir until smooth. Fold in beaten egg whites. Pour in 9 inch pastry lined pan. Bake at 350 degrees for 1 hour.
