BREAD PUDDING 
1 (20 oz.) loaf white bread
2/3 c. sugar
1/4 c. butter
1/2 c. raisins
2 eggs
1 tsp. vanilla
1/2 tsp. ground cinnamon
1/4 c. pancake syrup
2 tbsp. oil
water
1/2 c. milk
1/2 c. cream of coconut (optional)

Bread can be substituted with old pieces of hardened Italian bread.

Soak bread in a large container of water for at least 4 hours or overnight. After soaking, drain and squeeze out water; set aside. Mix butter with sugar; add eggs, vanilla, pancake syrup and cinnamon. Mix well. Add oil and bread; fold in raisins. Add cream of coconut, if desired. Add milk and mix very well.

Bake at 350°F for 30 minutes, until firm or until toothpick inserted in middle comes out clean. Remove from pan while hot. Enjoy!
