LAZARUS CHICKEN SALAD | |
1 qt. boned, cooked chicken (white meat), cut in chunks 2 c. diced celery (do not use processor) 1 c. real (Hellmann's) mayonnaise 1 tsp. chicken base 2 tsp. lemon juice 1/2 tsp. salt 1/2 tsp. white pepper 1/3 c. toasted, slivered almonds Dice chicken into 1 inch pieces. Chop celery and toss chicken, celery, and almonds together. Blend mayonnaise with chicken base and lemon juice, salt, and pepper. Combine with chicken mixture, folding gently. Chill and serve in lettuce cup or leaf. |
