CARROT - RAISIN SALAD 
2 c. shredded carrots
1 c.. (8 oz.) crushed pineapple, drain well
1/4 c. or more cooked raisins
1/4 c. mayonnaise or mayonnaise light
Dash salt lite

Cover raisins in water in sauce pan, bring water to boil and let mixture stand to cool. Raisins will be soft enough. Mix together all ingredients and let set to marinate at least 1 hour. Chill. Can be kept a couple of days. You can add or subtract ingredients to taste.
