BROILED FISH DIJON 
6 white fish fillets 1 inch thick (4 to 6 oz. each)
6 tbsp. lemon juice
2 tbsp. Dijon mustard
1 clove garlic, minced
Paprika
2 tbsp. drained and rinsed capers

Arrange fish in broiler pan. Drizzle each fillet with 1 teaspoon lemon juice. Combine the mustard and garlic. Coat top of fillets with mustard mixture.

Broil fish 6 to 8 inches from heat until fish is opaque in center, 10 to 14 minutes. Rotate pan, as needed, to cook fish evenly. Sprinkle fillets with paprika and capers. Serve hot, or cover and chill at least 30 minutes or up to 2 hours. 6 servings.
