ZUCCHINI BREAD | |
3 c. self rising flour 1 1/2 tsp. cinnamon 3 eggs 2 c. sugar 1 tsp. vanilla flavoring 1 c. cooling oil 2 c. coarse grated zucchini 1 c. pineapple, drained 1 c. pecans, chopped Cream eggs, sugar and oil. Add zucchini, pineapple and vanilla. Add dry ingredients and nuts. Mix well. Pour into 2 well greased and floured loaf pans. Bake at 350 degrees for 45 minutes to 1 hour. |
