RICE PIE 
1 c. regular rice (not minute)
1 1/2 lbs. Ricotta cheese
10 eggs
1 tsp. cinnamon
1 tsp. vanilla
2 c. sugar

Cook rice according to directions on box. Mix all ingredients except rice. Mix well then add rice. Pour into 2 quart rectangle dish and also 8 x 8 inch square dish. Dot each with butter. Bake at 350 degrees for 1 hour. Enjoy!

Great for Easter dessert.
