LEMON BAKED CHICKEN 
3 lb. chicken, cut up and skinned
1 tbsp. fresh lemon juice
1 tbsp. olive oil
1 garlic clove, crushed
Spice/herb seasoning blend
Pepper, dash
Parsley, chopped

In a bowl combine lemon juice, oil, garlic, herb blend and pepper. Arrange chicken in a shallow casserole and pour the lemon and oil mixture over it. Cover and bake at 350 degrees until tender, about 45 minutes, basting occasionally.

Uncover casserole and bake 10 minutes longer to allow chicken to brown. Sprinkle with parsley and serve. (Low cholesterol).
