LEMON BASIL GRILLED CHICKEN | |
1/2 Puritan oil 1/2 lemon juice 2 tbsp. white wine vinegar 1 tbsp. lemon peel 1 tbsp. dried basil 2 cloves garlic, minced 1/2 tsp. salt 1/2 tsp. freshly ground pepper 4 boneless chicken breast halves (about 1 lb.) 1. Combine Puritan oil and next 7 ingredients in a shallow baking dish, add chicken turning once to coat both sides. Refrigerate for 30-45 minutes turning once. 2. Prepare charcoal or grilling or heat broiler. Grill or broil chicken 4 inches from heat, turning once 3-5 minutes per side or until completely cooked. Serves 4. An easy make-over, always remove skin from poultry before or after cooking, that's where most of the fat is. |
