CHICKEN SALTIMBOCCA 
3 lg. chicken breasts, boned and halved lengthwise
6 slices boiled ham
3 slices Mozzarella cheese, halved
1 tomato, chopped
1/2 c. Italian style bread crumbs
2 tbsp. Parmesan cheese
2 tbsp. chopped parsley
4 tbsp. butter, melted

Pound chicken breast very thin between 2 sheets of plastic wrap. Place ham slice, cheese slice, top with some tomato. Tuck in sides, and roll up pressing tightly. Combine bread crumbs, parsley and cheese. Dip chicken rolls in butter; roll in crumbs. Place in shallow baking pan. Bake at 350 degrees for 45 minutes.
