APPLE CREAM CUPS 
3/4 c. chopped, peeled apple
1 tbsp. water
1 c. brown sugar
1 c. sour cream or 1/2 c. sour cream plus 1/2 c. plain yogurt
1/4 tsp. ground cinnamon
Vanilla ice cream

Combine apple and water in a small saucepan or glass bowl. Cover; cook on stovetop or in microwave oven until water boils. Stir in remaining topping ingredients; cook until sugar melts, stirring once. Let cool slightly; serve warm over ice cream. Garnish with peanuts if desired. Yield 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
