Oil Lettuce Carrots Cor n tortillas Any meat This is especially good to use up any leftover chicken or best of all a pork or beef roast. If using leftover meat, shred and set aside. If cooking fresh meat, season, cool and shred or slice very thin. In frying pan on medium heat, 2 tablespoons oil. Lay 1 tortilla in at a time and heat about 30 seconds on each side - just enough to be pliable. With tongs remove to a paper towel to sop up oil. Put a half of handful of meat at one end of the tortilla and roll up like a cigar. Do this until all meat or tortillas are used setting each aside on 1 plate. About 20 minutes before serving, heat on high about 1 cup of oil. When hot put two Flautas (seam side down) in oil. Hold with tongs until they will stay by themselves. Put two mire in. When they stay, turn first two over and continue until crispy brown. Place all of these on a platter layered with shredded lettuce and thin sliced carrots. Serve with any kind of guacamole or salsa. This might seem hard the first time, but the next time it will be fun and is very rewarding. Serve with white or Spanish rice. |
