CHEESE AND BACON QUICHE 
9 inch unbaked pie shell
1 1/2 c. grated natural Swiss cheese
3 eggs
1/2 tsp. salt
1/2 lb. bacon
1 1/2 c. light cream
Dash of nutmeg, cayenne pepper and pepper

Prepare pie shell; refrigerate until ready to use. Preheat oven to 375 degrees. Fry bacon; drain; crumble bacon into bits and sprinkle over bottom of pie shell. Then sprinkle with Swiss cheese. In medium bowl, with rotary beater, beat eggs with light cream, salt, nutmeg, and cayenne pepper until well combined but not frothy. Pour into pie shell. Bake 35 to 40 minutes or until it is golden and center is fairly firm when shaken. Let cool for 10 minutes before serving.
