DIABETIC LEMON PUDDING 
1/2 c. lemon juice
3 tbsp. cornstarch
1/8 tsp. salt
2 c. skim milk
Few drops yellow food coloring
Few drops lemon extract
12 packets (12 grams) EQUAL Sweetener

Mix lemon juice, cornstarch and salt in a medium saucepan and stir until smooth. Add milk. Place over medium heat and stir until mixture boils and thickens. Remove from heat and stir in food color, lemon extract, and Equal. Pour into dessert dishes and cover with plastic wrap to prevent a skin from forming. Refrigerate. Servings: 4. Exchanges: 1 bread.
