2 lg. onions 1 c. milk 1 c. water Skin onions and cut crosswise into 1/4" slices. Combine milk and water. Soak onions in this for 1/2 hour. Drain them. Spread them on absorbent paper and dredge them with Fritter Batter. FRITTER BATTER: 1 1/3 c. flour 1 tsp. salt 1/4 tsp. pepper 1 tbsp. melted butter 2 beaten egg yolks 3/4 c. flat beer In large bowl mix well the first 5 ingredients. Add flat beer gradually, stirring constantly. Allow batter to rest. Cover and refrigerate 3 to 12 hours. Just before using you may add 2 stiffly beaten egg whites. Coat onion rings and fry until brown at 350 to 400 degrees. |
