OLD - FASHIONED OATMEAL COOKIES | |
1 c. seedless raisins 1 c. water 3/4 c. soft shortening (Crisco) 1 1/2 c. sugar 2 eggs 1 tsp. vanilla 2 1/2 c. flour 1/2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 1/2 tsp. nutmeg 1/2 tsp. allspice 1/2 tsp. cloves 2 c. rolled oats 1/2 c. chopped nuts Simmer raisins and water in saucepan over low heat until raisins are plump, 20- 30 minutes. Drain raisin liquid into measuring cup. Add water to make 1/2 cup. Heat oven to 400 degrees (medium hot). Cream shortening, sugar, eggs and vanilla. Stir in raisin liquid. Measure flour by dip-level method or by sifting. Blend flour, baking powder, soda, salt and spices; stir in. Add rolled oats, nuts and raisins. Drop by rounded teaspoonfuls 2 inches apart onto ungreased cooking sheet. Bake 8-10 minutes. Makes 6-7 dozen. |
