QUICK CORNED BEEF 
1 (12 oz.) can corned beef
3 c. mashed potatoes (if using instant, omit salt)
1 c. sour cream
3 tbsp. chopped parsley
1/4 c. chopped baby gherkins
1/2 tsp. dillweed
3 tbsp. finely chopped onion
3 tbsp. diced celery
1 tsp. salt
1/4 tsp. pepper

Crumble corned beef or dice into 1/4 inch cubes. Combine with mashed potatoes. Blend in sour cream and add remaining ingredients. Chill. Serve on crackers as an appetizer.
