SQUASH BREAD 
4 eggs, beaten
1/2 c. oil
Dash of black pepper
1/2 tsp. oregano
1 tsp. salt
1 c. cheddar cheese, shredded
1/2 c. onion, chopped
1 c. buttermilk biscuit mix
3 c. squash, thinly sliced

Beat to blend the eggs and oil. Mix the remaining ingredients together and pour egg mixture over. Bake in a greased 9 x 13 inch pan for 25 minutes at 375 degrees.
