SPINACH MANDARIN SALAD 
2-3 oz. sliced almonds
1 tbsp. sugar
1 c. diagonally sliced celery
11 oz. can mandarin oranges, drained
8 c. spinach leaves, about 2 lbs.
2 green onions, chopped

Combine almonds and sugar in a small frying pan. Cook and stir over medium heat until sugar is caramelized and almonds coated. Put spinach, celery and green onions in a salad bowl. Sprinkle orange slices and almonds on top. Cover and refrigerate. When ready to serve, toss with Sweet and Sour Dressing.

SWEET & SOUR DRESSING:

1/4 c. vegetable oil
2 tbsp. red wine vinegar
2 tbsp. sugar
5 drops Tabasco sauce
1 tbsp. chopped fresh parsley
1 tsp. salt
Dash pepper

Mix well.
