COUNTRY BREAKFAST 
4 c. cooked potatoes, diced
1/2 c. green pepper, chopped
2 tbsp. onion, chopped
Oil or butter
Salt and pepper
4 eggs
1 c. shredded sharp cheese

Cook potatoes, onion, green pepper, salt, and pepper in oil or butter until brown. In skillet, break eggs over mixture. Cover and cook until eggs are set. Sprinkle with cheese. Cover and heat until cheese is melted.
