ZUCCHINI BREAD | |
3 eggs 7/8 c. turbinado sugar 1 c. oil 1 tbsp. vanilla 1 tsp. salt 1 tsp. baking soda 1 1/2 tsp. baking powder 1 tbsp. cinnamon 2 c. grated or shredded zucchini, raw and unpeeled 3 c. whole wheat pastry flour 1 c. nuts or raisins, if desired 1/2 c. chocolate chips, if desired Beat eggs until light and fluffy. Slowly add sugar and beat well. Add oil and vanilla. Add zucchini. Sift and add dry ingredients alternately. Add nuts, raisins or chips. Makes 2 medium loaves or 4 small ones. Bake large loaves 1 hour and small loaves 1/2 hour and test to see if done, at 350 degrees. |
