AUNT EILEEN'S POTATO CASSEROLE 
2 (12 oz.) pkg. shredded frozen potatoes (thaw)
1 tsp. salt
1 c. light cream (1/2 whipping cream & 1/2 milk)
1/2 tsp. pepper
1/4 c. butter (1/2 stick)
1 tbsp. onion flakes
1/3 c. sharp shredded cheese

Crisco a 13 1/2 x 8 3/4 inch dish. Bring cream to boil. Add butter, salt and pepper. Stir in cheese, potatoes and small jar pimento (well drained and washed) for color. Bake for 1 hour at 350 degrees. Serves 8.
