PETITE LEMON MUFFINS 
1/2 c. butter
1 1/4 c. sugar
2 eggs
1 1/2 c. all-purpose flour
1/2 tsp. salt
1 tsp. baking powder
1/2 c. milk
Grated peel and juice of 1 lemon

Preheat oven to 400 degrees. Thoroughly grease about 36 small muffin cups or use paper liners and spray with non-stick spray. Beat together butter and 1 cup sugar until light and fluffy. Add eggs; beat well.

Sift flour with salt and baking powder. Add in thirds to creamed mixture alternately with milk. Add grated peel. Spoon into muffin tins, filling 2/3 full. Bake until done, about 15 minutes.

Combine lemon juice and remaining 1/4 cup sugar; spoon evenly over muffins while still warm. Remove from pan and cool on rack.
