MOM'S BEEF-RICE CASSEROLE 
1 lb. very lean ground beef
1/4 c. chopped onion
1/4 c. chopped green pepper (optional)
1/4 tsp. pepper
1 tsp. salt
1/2 c. dry bread crumbs
15-16 oz. tomato sauce
3/4 c. grated cheese
2 1/2 to 3 c. cooked rice

Combine raw ground beef, crumbs, vegetables, seasonings, and 1/2 cup tomato sauce. Put into 1 1/2 quart casserole. Combine rice, remaining tomato sauce, 1/2 cup cheese. Put on top of meat mixture. Bake at 350 degrees for 35-40 minutes. Sprinkle with remaining cheese and bake for 5 minutes longer.
