BEEF BROCCOLI 
Rum steak or beef BBQ strips
1 1/2 tbsp. soy sauce
1 tsp. salt
4 tbsp. vegetable oil
1 head of broccoli (med. size)
2 tbsp. oyster sauce
2 tbsp. sugar
1 tbsp. cornstarch
1/8 tsp. baking soda
1 1/2 tbsp. water

Cut off all fat on the meat. Then slice it with the grain into 1/4 inch thick slices. Add 1 1/2 tablespoons soy sauce and 1 tablespoon vegetable oil to the meat mixture. Mix thoroughly until you have completely coated the meat. Then let it stand for 10 minutes.

Cut the broccoli tops from the bunch. Then peel the stems and slice at an angel. Put stems, leaves and tops in a bowl. Bring a large pot of water to a little boil. Add broccoli and blanch for 1 minute and then drain immediately.

Mix 1 tablespoon cornstarch, 1 1/2 tablespoons water and a pinch of baking soda together. Then add this to the meat mixture and stir well. Add 3 tablespoons of vegetable oil to wok. When the oil is really smoky, then add the meat mixture.

Stir with a wok shovel and brown the meat for a few minutes, adding 2 tablespoons of sugar and 1 teaspoon salt. Stir the meat again and add 2 tablespoons of oyster sauce. Add the broccoli and stir the entire dish together. Heat together for a few minutes and then serve.
