CATFISH GUMBO 
1 lb. catfish fillets
1/2 c. chopped celery
1/2 c. chopped onion
2 beef bouillon cubes
2 c. boiling water
1/4 tsp. pepper
Bay leaf
1 can tomatoes
1 pkg. frozen okra
1/2 c. green pepper
1 clove garlic
1/4 c. oil
2 tsp. salt
1/4 tsp. thyme
Hot pepper sauce
Cooked rice

Cook celery, pepper and garlic in oil until tender. Dissolve bouillon in water. Add to cooked vegetables. Add tomatoes, okra and seasonings. Simmer for 30 minutes. Add fish cut in 1 inch pieces. Cook 15 minutes longer until fish is tender. Serve over rice.
